PDF to Markdown takes the text of a PDF and writes it as Markdown: big text becomes headings, bullets and numbered lines become lists, and lines are joined back into paragraphs. It is handy for notes, wikis, websites and AI tools. Arabic text comes out in the right order. A scanned PDF has no text yet: run OCR PDF on it first.
